Of all the soups, this would have to be my absolute favourite. Thick, hearty, and delicious.  This recipe uses the whole ham hock, which you chop up at the end so you can enjoy huge chunks of ‘bacon’ in your soup.  

Guaranteed to be enjoyed, even by any men in your life – because it is a MANLY soup!

I recently went to a restaurant in Toowoomba that served this soup as a complimentary starter – topped with Fennel Seeds in tiny little steaming bowls.  And you know, it warmed me from the inside out – all the way to my toes.  

Was so refreshing for soup – and had I not tried it, I don’t think I would have picked it off the menu.

If you haven’t made French Onion Soup from scratch, you can’t comment.  It is freaking delicious.  I know it has a billion onions in it – but they really make the soup nice and sweet.  And to be traditional, you HAVE to make the cheesy croutons to sit in the soup (on top of the onions) – such a filling, rich and decadent soup.
