Christmas Morning Chocolate Mint Pancakes


  1. In a large mixing bowl, stir together the flour, sugar, baking powder, baking soda and cocoa powder.

  2. Add the egg, milk, oil and min extract. Stir until very smooth.

  3. Heat the pan to medium heat and lightly spray with cooking spray.

  4. Add about 1/4 cup of pancake batter to the pan for each pancake. Cook until the top of the pancake begins  to bubble. Flip and cook for another 2-3 minutes on the opposite side.

  5. Continue until all the batter is used.

  6. Stack the pancakes and top with mini marshmallows, crushed candy canes and chocolate syrup.

  7. Serve for a Christmas breakfast!
